Amuse bouche

Parmesan gougere, onion mayo

Starter

Char grilled Cornish Asparagus, soft poached egg, lemon and thyme dressing, salad of crispy frissee and bacon lardons

Fish course

Pan roasted wild sea bass fillet, pickled cucumber and caper mayo, burnt cucumber, champagne and caviar sauce

or

Jerusalem artichoke roasted in kombu, pickled cucumber and caper mayo, burnt cucumber, champagne sauce

Main course

Roasted rump of lamb, smoked aubergine puree, roasted med veg, fondant potato, olive and sun blushed tomato jus

Roasted miso celeriac steak, warm Asian ‘slaw, pickled apples and shoestring fries
